1 pkg spinach noodles; cooked and drained
3 oz softened cream cheese
1 lb shrimp; peeled and deveined
1/2 cup butter; softened
salt & pepper
1 can cream of mushroom soup
1 cup sour cream
1/2 cup mayo
1/2 cup half & half
1 tbsp chopped chives and same of parsley
1/2 tsp Dijon mustard
shredded sharp Cheddar cheese
~Pre heat oven to 325
~Cook pasta
~Combine pasta and cream cheese in a bowl and place into a 9x13 baking dish
~Cook shrimp in butter over medium high heat about 5 minutes or until pink (I added garlic, onion, tomato and pepper in this step)
~Spread shrimp over noodles
~ In a bowl, combine soup, sour cream, half and half, mayo, chives, parsley, and mustard. Spread over shrimp.
~ Sprinkle shredded cheese over top
~ Bake 25 minutes.
This dish is absolutely amazing and fairly easy. More importantly it was something that everyone liked so it will definitely go into weekly rotation. ENJOY!

Crunchy Corn Crisps
This recipe I found in Disney Family Fun Magazine. I tweaked it a bit. These are wonderful. Enjoy!!!!
1/2 cup self rising floursalt
1/4 tsp sugar
1/8 tsp cayenne pepper
1 large egg
1/4 cup milk
1 TBSP butter; melted
1 1/2 cups corn
1/4 cup finely diced scallions
canola or vegetable oil
- In a medium bowl, combine the flour, dash of salt, sugar, and cayenne.
- In another bowl, whisk the egg, milk, and melted butter.
- Stir the wet ingredients into the dry ones. Fold in corn and scallions.
- Pour oil into skillet, enough that it comes 1/4 inch up side of pan.
- Heat until shimmering
- Drop a small spoonful of batter into oil flatten it slightly with back of spoon.
- Fry over med-high heat about 2 minutes on each side until golden brown.
- Tranfer to paper towels and sprinkle with salt.
- Repeat with remaining batter.

Baked Broccoli
1 head of broccoli
olive oil
parmesan cheese
salt & pepper
garlic powder
Cut up broccoli and place on cookie sheet
pour olive oil over broccoli by placing finger over spout to prevent pouring too much
sprinkle with salt, pepper, and garlic powder
bake for approx 20-30 minutes at 350 degrees
Remove from oven and top with parmesan cheese.

Best Meatloaf Ever!
1 pkg Liptons onion soup mix
ketchup
2 eggs
bread crumbs
swiss cheese
bacon
onions
Prepare the meatloaf according to the directions on the back of the Liptons box.
Loaf half of the meat on a baking sheet; top with shredded cheese, whichever kind you prefer.
Place the remaining meat on top and pinch edges to prevent cheese from spilling out during cooking.
Cook for approx 50 minutes
In the meantime fry onions and bacon; set aside.
Remove meatloaf from oven and top with onions, bacon, and slices of swiss cheese
Return to oven until cheese has melted.

Buttermilk Breaded Pork Chops
1 pkg center cut pork chops
Buttermilk
Salt & Pepper
Garlic powder
Flour
Oil
~Place meat in a 9*13 baking dish
~ Season both sides with salt, pepper, and garlic powder; rub into the meat
~ Pour buttermilk over meat until it is covered
~Cover and place in fridge for at least a few hours
~ Heat oil in skillet and remove meat from fridge
~Dredge meat in flour and shake off excess
~ Cook meat on both sides until cooked through
~Drain on paper towels before serving
** A lot of the breading will fall off the meat during cooking. Simply remove it from the grease with tongs and place on the meat at the end. It will be golden and crunchy. I serve this with white rice and green beans cooked in bacon grease and onions. Enjoy!

Patty Melt Pizza
1 lb ground beef
2 medium onions
1/3 cup shredded six blend cheese
7 slices sharp chedder
1/3 cup thousand island dressing
1/3 cup A-1 or steak sauce
1 (12 in) pizza crust
2 tablespoons butter
1 teaspoon worsteshire sauce
1 teaspoon seasoned salt
Preheat oven to 400
Slice onion
Preheat large saute pan on medium-high 2-3 minutes.
Add ground beef, seasoned salt, and pepper; brown 5-7 minutes, stirring to crumble meat until no pink remains.
Stir in steak sauce; remove meat from pan.
Place pizza crust directly on oven rack; cook 7-8 minutes or until slightly crispy.
Place butter in same pan, then add onions, worsteshire sauce and cook 8-10 minutes or until softened and well browned.
Place pizza crust on baking sheet. Combine shredded cheese and dressing; spread over crust. Arrange meat over dressing; spread onions over meat. Top with chedder cheese and return to oven; bake 4-5 minutes oruntil cheese melts. Slice pizza and serve.

The Very Best Baked Potato Soup!!
I have made this for most of my family and friends and it's always a hit. Enjoy.
2 cups potatoes, diced but unpeeled
1/4 lb of butter
2 cups finely diced yellow onions
1/2 cup of flour
4 cups of warm water
1/4 cup of chicken bullion
1 cup of dry potato flakes
2 cups of heavy cream
2 cups of milk
salt, pepper, garlic powder and basil to taste
Saute' onions in melted butter for 10 minutes
Add flour to onions and Cook 4-5 minutes, stirring until flour is absorbed
Combine water, bullion, potato flakes and seasonings. Stir until mixed with no lumps . Add this mixture to onion mix, a little at a time.
Add milk and cream, stirring until smooth and lightly thickened
Reduce heat and simmer 15 minutes
In separate container, potatoes should be covered with water, brought to a boil and simmered for 20 minutes.
Combine potatoes with soup to complete.
**Removing from heat with thicken this, an it does get very thick.**
***Adding bacon, cheese, or ham makes this soup even better***
