The Very Best Baked Potato Soup!!

I have made this for most of my family and friends and it's always a hit. Enjoy.

2 cups potatoes, diced but unpeeled
1/4 lb of butter
2 cups finely diced yellow onions
1/2 cup of flour
4 cups of warm water
1/4 cup of chicken bullion
1 cup of dry potato flakes
2 cups of heavy cream
2 cups of milk
salt, pepper, garlic powder and basil to taste

 Saute' onions in melted butter for 10 minutes
Add flour to onions and Cook 4-5 minutes, stirring until flour is absorbed
Combine water, bullion, potato flakes and seasonings. Stir until mixed with no lumps . Add this mixture to onion mix, a little at a time.
Add milk and cream, stirring until smooth and lightly thickened
Reduce heat and simmer 15 minutes
In separate container, potatoes should be covered with water, brought to a boil and simmered for 20 minutes.
Combine potatoes with soup to complete.

**Removing from heat with thicken this, an it does get very thick.**
***Adding bacon, cheese, or ham makes this soup even better***

Giggy's Hashbrown Casserole

2 pounds of frozen hash browns
1/2 cup of melted butter
1 can of cream of chicken soup
1 pint of sour cream
1/2 cup chopped onion
2 cups of grated cheddar cheese
1 tsp. salt
1/4 tsp pepper
2 cups crushed cornflakes or plain potato chips
1/4 cup of melted butter

Defrost the hash browns
Combine next 7 ingredients and mix with hash browns
Put it all into a 3 quart casserole
Saute cornflakes in butter and sprinkle on top
Cover and bake at 350 degrees for 40 minutes

**This is very similar to the hash brown casserole at Cracker Barrel**

Bacon Wrapped Chicken..from the kitchen of Christina LeClaire

4 chicken breasts
8 ounces of cream cheese
1 tsp of chives
4 slices of bacon
1 can cream of chicken soup
1/2 cup of mayo
1/2 cup of milk
1 tsp lemon juice
1/4 tsp pepper
pinch of salt

Preheat oven to 325 degrees
Lightly grease 9*13 baking dish
Pound the chicken out flat  (or you can use cutlets instead of breasts and skip this step)
Spread cream cheese on each piece and sprinkle with chives.
Roll up chicken and wrap closed with bacon

In a bowl, combine all other ingredients, mix until smooth and pour over chicken. Bake for one hour.

 This is one of my favorite dishes. Love it with mashed potatoes.

Corn Casserole

1 can drained corn
1 can cream corn
8 ounces corn muffin mix
1 cup sour cream
1/2 cup melted butter

Preheat oven to 350 degrees
Mix all ingredients
Grease a 9*13 baking pan
Place ingredients in pan and bake 45 minutes
Let stand 5 minutes before serving

***You can top this recipe with cheese of desired after the 45 minutes and bake an additional 5-10 minutes**

Super Simple Sausage and Rice

1 Hillshire Smoked Sausage cut into circles
1 10 ounce package of yellow rice
1/2 chopped onion
1/2 can diced tomatoes (more if you like)
shredded cheese
1 can of corn; drained

Preheat oven to 350 degrees

Cook sausage; drain and add desired seasonings, corn, onions, and tomatoes. Cook through
Prepare rice according to package directions.

Combine all ingredients and top with shredded cheese. Bake in oven for 10-15 minutes.

Cheese Stuffed Meatloaf

1 envelope Lipton Recipe Secrets Onion Soup Mix
2 lbs ground beef
3/4 cup dry bread crumbs (I typically add this and then a little more at a time if needed)
2 eggs
1/3 cup water
1/3 cup ketchup
1/2 chopped onion
any type of shredded cheese you like
salt, pepper, garlic powder

Preheat oven to 350 degrees. Combine all ingredients in large bowl.

Shape half of the meat into loaf in a 9*13 baking dish, top with shredded cheese.

Place the remaining meat on top and press the edges together so that the cheese cannot seep out.

Bake for one hour uncovered. Let stand 10 minutes.
 This is the meatloaf getting ready to go into the oven. I added some extra ketchup to the top.
